Named 'Winery of the Year' in James Halliday's 2011 Wine Companion, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in spending time in the vineyard, in paying attention to canopy and water management, and most importantly, picking at the right time with minimal interference in the winery. From delicate whites to big reds his wines have class and finesse. The prodigious Australian producer also makes wine under the Laissez Faire name. These are a range of natural wines, and they are the ultimate expression of natural winemaking made in small batches from hand-harvested grapes.
The 2014 warm summer cooled off in early March, allowing the fruit to ripen at a slow and even pace. The Porongurup (Great Southern) region had above average rainfall through the winter and spring months. Spring's exceptional conditions allowed for gentle warming and fruit set. Continuing warm weather through to April provided excellent fruit.
The grapes are grown in a south facing vineyard in the Porongurup sub region, which was planted in 1998 to adensity of 1800 vines per hectare. The vines are of unknown clones but they are on their own root stocks. The vineyard is irrigated to achieve the optimal amount of moisture required.
The ultimate expression of natural winemaking made in small batches from hand-harvested grapes. The fruit was whole bunch pressed. The juice was then settled without the addition of enzymes, sulphur or acid. Once settled, it was allowed to ferment naturally at low temperature for six weeks. The wine was then bottled in the August, of the same year.
A beautiful lemon and lime sherbet style Riesling. Very fresh, crisp with textured minerality that adds complexity and grip. Moderate alcohol and a refreshing lip-smacking finish.
Stunning with Prosciutto-wrapped tiger prawns and a pickled vegetable slaw.
