Domaine de la Rossignole Sancerre White Wine 2019
The Domaine de la Rossignole Sancerre is a delicate version of Sancerre showing bright lemon and smoky tones finishing on a refreshing, mineral note.
Producer Note - This Sancerre domain has been passed down through the generations of the Cherrier family since 1848 and the name Domaine de la Rossignole was given in honour of one of the ancestral parcels. Since 1994, the estate has been run by François and Jean-Marie Cherrier, who passionately believe in a philosophy of minimal intervention in the vineyard and winery, allowing the wines to fully express the terroir. The result is a stunning Sancerre, which showcases all the classic hallmarks of this elegant house style.
Vintage - 2017 was characterised by a chaotic start to the vintage with 10 days of very cold weather including two days of morning frost which destroyed part of the vineyard. Fortunately the remainder of the season was more serene with ideal weather conditions, which brought about optimal maturity and an early harvest. The harvest started on 18th September and delivered grapes with wonderful aromatic finesse.
Vineyard - The vineyard is located in the heart of the Sancerre appellation and the soil is a blend of the three main soils which are typical of the region: clayey-siliceous, silex and clayey-chalk. Biodynamic techniques are employed in the vineyard. The vines are cultivated as naturally as possible, with ploughing, hoeing and short pruning. The environment is respected when protecting the vineyard against disease. The vineyard is managed in order to consume the least amount of energy as possible.
Winemaking - The grapes were pressed within two hours of being picked, in order to retain freshness. The must was settled over 24 hours, separating the juice from the solids. After a racking, the juice was transferred to stainless steel tanks, where it underwent fermentation at controlled temperatures of between 19°C and 20°C. The wine was racked and matured on its fine lees to add texture and complexity, before being cold stabilised, filtered and bottled.
Tasting Note - An aromatic vintage delivering complex aromas of floral notes, juicy pineapple and wild strawberries. A beautifully structured Sancerre, with a full, fleshy palate and refreshing flavours of exotic fruits enveloped by distinctive mineral overtones. Long and aromatic on the finish.
Serving Suggestion - Delicious with seafood, grilled fish with delicate sauces, Japanese cuisine and goat's cheese.
