Larry takes great care of his wines and want's to achieve the finest expression of place available for each wine he produces. This Cabernet Sauvignon will ages gracefully for many years yet drinks superbly if decanted a couple of hours prior to tasting.
Producer Note
Named 'Wineryof the Year' in James Halliday's 2011 Wine Companion, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in spending time in the vineyard, in paying attention to canopy and water management, and most importantly, picking at the right time with minimal interference in the winery. From delicate whites to big reds his wines have class and finesse. The prodigious Australian producer also makes wine under the Laissez Faire name. These are a range of natural wines, and they are the ultimate expression of natural winemaking made in small batches from hand-harvested grapes.
Winemaking
Fruit wash and harvested, sorted and then gentl yde-stemmed & crushed. Maceration was gentle and lasted for about three weeks. The wine was aged in new and one year old oak for eight months.
TastingNote
On the nose, intense blueberry, white pepper and spice. The palate sits well and truly in the savoury spectrum with smoky spice, tobacco and earthiness complementing the deep dark fruit profile. Extremely complex with cinnamon, star anise and white pepper notes. The wine is dense, intense and powerful, yet the palate retains a silky elegance. The tannins are fine and the wine can e cellared with confidence.

Ideal with slow roasted lamb shoulder and rosemary potatoes.
