The Ovilos Barrell Fermented Semillon Assyrtiko Blend from Biblia Chora is often described as a Greek version of a white Graves. It's got a light yellow colour with a green hue, enticing aromas of peach and vanilla with a burst of fresh grapefruit and minerals. Ovilos white wine has wonderful weight and added texture on the palate with notable minerality. Ovilos from Biblia Chora is superb when served with risottos or creamy pasta dishes.
This is one of the newest estates on the Greek scene. Evangelos Geravassiliou and Vassilis Tsaktsalis are two of the best white wine makers in Greece. The vineyards are based near Kavala, the second largest city in the north of Greece, where the excellent soil and microclimate provide long growing seasons.
Vinification
100% fermented in oak for 6 months with full malolactic fermentation.
Viticulture
The density of the planting is 4.000 plants/ha. All works (pruning, harvest ) are handled by hand.

Biblia Chora Ovilos Semillion Assyrtiko is light yellow with a green hue, enticing aromas of peach and vanilla with a burst of fresh grapefruit and minerals. Wonderful weight and added texture on the palate with notable minerality. A tropical version of a white Graves.
