Bonacchi Vin Santo del Chianti 2008
The Vin Santo de Chianti from Cantina Bonacchi is a traditional Tuscan sweet wine with heady aromas of tofee and caramel. Vin Santo is traditionally served after a main meal with Cantuccini biscuits or as a palate cleanser. This is a superb dessert wine too and will match most desserts and strong cheeses.
Cantina Bonacchi, located in the heart of Montalbano, has been making fine Tuscan wines for 3 generations. The wines are produced from 40 hectares in the Chianti Montalbano and the Chianti Classico area, as well as from 10 hectares divided between Brunello DOCG, Rosso di Montalcino DOC and the Santa Antimo DOC. The latest addition is 15 hectares in the Montecucco DOC region. Bonacchi's combined production comprises 60,000HL, stored in barrels, barriques, oak tonneaux and modern steel tanks. The Company is ISO 9001, IFS and BRC certified.
Vinification
The grapes were harvested and the bunches were then hung up to dry for about 2 months in well-ventilated rooms. The carefully selected dried grapes were pressed and the must put into small oak barrels not filled to the top to allow oxidation to occur. The barrels were sealed airtight and the Vin Santo is left to ferment and age in the same barrel for a period of about 5 years.

Tasting Note
Bonacchi Vin Santo del Chianti has a nose of toffees and caramel through to a palate with balanced sweetness and warm alcohol on the finish.

Well chilled as an aperitif or with desserts and mature cheese.
