Carpineto Vin Santo del Chianti Farnito 1999
The Vin Santo from Carpineto is a complex dessert wine with an intense flavour and a persistent finish. This fabulous dessert wine is wonderful when served with all forms of dessert and strong cheeses.
Carpineto was founded in 1967 by Antonio Zaccheo and Giovanni Sacchet and farms 424 hectares of land spread over four estates among Tuscany's most prestigious appellations. The original aim of the producers - to produce modern, world-class red wine from the Chianti Classico appellation (a radical departure when most Chianti was still produced in the traditional wine-making style) - has been admirably fulfilled. Pioneers of internationalism of Tuscany, the Dogajolo is a great example of this ethos of action. Carpineto has been named IWSC Italian Wine Producer Of The Year in 2003 and was the first ever Italian winery ever to win the IWSC International Winemaker Of The Year Trophy in 1994. Antonio Zaccheo is now aided by his son Antonio and daughter Francesca, who both previously worked in the wine trade in the USA. Giovanni Sacchet's daughter, Caterina, has recently joined the Carpineto winemaking team after finishing her viticulture and oenology degree.
Vinification
The harvested grapes are dried in wooden boxes then slowly barrel fermented during the winter months. Part of the wine was aged in traditional "caratelli", small barrels made of chestnut, the other part was aged in oak barrels, all for a total of 14 years. The wine was bottled and left to rest in a temperature controlled underground cellar.
Viticulture
Single wire cordon. Manual and mechanical harvesting.
Tasting Note
Lovely balance between the complex, intense balsamic fragrances, alcohol and sweetness. Full of toffee and peach flavours together with walnuts, this wine is concentrated, long and persistent on the finish.
Everyday Serving Suggestion
Carpineto Vin Santo del Chianti Farnito is best served at 5-7°C as an aperitif, or at 16°C with desserts, and strong cheese such as Pecorino and Gorgonzola. Also excellent by itself as a meditation wine.
