Cevico Pignoletto Frizzante Colli Imola 2018
The Pignoletto Colli Imola from Cevico wines has an attractive and delicately floral bouquet on the nose and a crisp, refreshing flavour. A cross between Pinot Grigio and Prosecco in style, slightly sparkling.
Producer Note - Based in Emilia-Romagna, Cevico is the second biggest Italian wine producer, representing 18 wineries and with over 6,700 hectares under vine. This is one of the most impressive companies we have ever been to. As well as the benefits of size, Cevico offer a myriad of small estates producing a bewildering array of wines, from both established and lesser-known appellations.
Vintage - A very mild winter resulted in an early start to the growing season. Low rainfall during spring resulted in reduced yields. However, hot and dry weather conditions during the summer growing season produced ripe and healthy grapes with vibrant fruit flavours and excellent varietal characteristics.
Vineyard - Pignoletto Imola DOC gains its title from the nearby hills, the Colli Imola. The appellation starts at the Po valley floor and reaches the western edge of the town of Imola. Here the land is gently sloping with a soil based on clay and loam. The Grechetto Gentile grape variety (previously referred to as Pignoletto) is used for the production of gently sparkling and still wines due to its aromatic expression and fresh acidity. Cultivated mostly on the hills but also on the plains, this vine is hardy and adapts well to different climatic conditions.
Winemaking - The grapes were pressed and the must was settled. The juice was fermented in temperature controlled stainless steel tanks to retain the delicate flavours of this variety. The secondary fermentation took place in an autoclave using the Charmat method. It lasted for one month, using only selected yeasts and was maintained at a controlled temperature of 12°C. The wine spent 15 days on its lees, adding a creamy texture and complexity to the resulting wine. It was bottled at 2.5 atmospheres of pressure.

Serving Suggestion - Pignoletto is a food friendly sparkling wine, which is dry enough to balance the acidity of tomatoes, but round and fruity enough to accompany fish and creamy pasta dishes. Accompanies first courses, fish and fresh cheese. Also delicious with Chinese inspired cuisine.
