Producer Note - One of the main protagonists in the renaissance of Southern Italian wines, Feudi di San Gregorio has carved out a reputation for making truly world-class wines in less than 30 years. The company began in the mid 1980s with the aim of safeguarding local traditions and unlocking the potential of key indigenous grapes such as Fiano, Greco, Falanghina and Aglianico. Vineyard The beautiful Feudi di San Gregorio vineyards are spread out over lush and gentle hills in Sorbo Serpico, approximately an hour from Naples and Mount Vesuvius. The soils are uniquely volcanic, sandstone and marl. Each vineyard is closely monitored with a meteorological station and combined with the technologies of the new state of-the-art wine cellar; they ensure that each vintage comes as close to perfection as possible. The soil in the vineyards is predominantly volcanic, which imparts the distinctive minerality in the resulting wine.
Winemaking - Vinified using the traditional method, the primary fermentation took place in temperature controlled stainless steel tanks at 16-18°C. This was followed by a secondary fermentation in the bottle. The wine spent 24 months ageing on its fine lees adding texture and complexity.
Tasting Note - A traditional method sparkling wine with a fine and persistent mousse. Floral and fruity aromas of pumpkin flowers, honey, mango and citrus fruits contrast with the chalky vibe of the Greco grape. A good weight on the palate combines with youthfulness and a persistent minerality typical of the terroir.
Serving Suggestion - The perfect apéritif served chilled. Fresh seafood, sea truffle risotto, or fried baccalà (dried and salted cod) served on a layer of chickpeas.
