Fox Gordon Dark Prince Nero d'Avola 2017
The Fox Gordon Dark Prince Nero d'Avola is a herby, juicy, fresh explosion of a red wine. This red wine is delicious with all types of pizza and pasta as you would expect with a really good Nero d'Avola.

These are contemporary and premium wines which are all made using the Fox Gordon philosophy of low input and low yield to give maximum flavour and preserve the inherent qualities of fruit and site. “If the fruit speaks for itself, the winemaker's job is much simpler,' says Tash.
The vines are 10 years old, planted at the top of a hill at an altitude of 480 metres above sea level. It is a really boney site, with lots of rocks, which suits this very vigourous variety, as the site has very little top soil, so it slows the vigour down.
The grapes were destemmed and the underwent a cold soak for a week before fermentation in stainless steel. Fermentation lasted for two weeks and before being transferred to old French oak barrels for 12 months. The wine saw no new oak and was unfiltered.
Juicy sun kissed plums and redcurrants are set against a herbacious note of rosemary and thyme. Fox Gordon Dark Prince has an incredibly entincing fresh, almost crunchy texture.
Delicious served slightly chilled, try with a wild boar ragu or prosciutto pizzas
