Larry Cherubino The Pedestral Semillon Sauvignon Blanc 2016
Named 'Winery of the Year' in James Halliday's 2011 Wine Companion, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in spending time in the vineyard in paying attention to canopy and water management, and most importantly, picking at the right time with minimal interference in the winery. From delicate whites to big reds his wines have class and finesse. The prodigious Australian producer also makes wine under the Laissez Faire name. These are a range of natural wines, and they are the ultimate expression of natural winemaking made in small batches from hand-harvested grapes.
Winemaking
The Semillon and Sauvignon Blanc parcels were picked at maximum flavour over several weeks, to ensure thatall the various soil types and aspects of the vineyard were fully exploited. Fruit was hand picked and destemmed with some skin contact for up to 12 hours. Free run and pressing fractions were separated with 1/3 of the juice parcels going into new Bordeaux style French oak for 4 months and the balance to stainless steel. All of the parcels were fermented using natural yeasts only and battonage was carried up until bottling.
Tasting Note
The wine exhibits aromas and flavours in the savoury spectrum. Pea pods, minerality and citrus. The crunchy acidity is softened by layers of texture, which is due to the partial oak fermentation. The palate is intense and focussed, yet soft and immediately drinkable. With a clean zippy acid structure, defined backbone and summery freshness this is the ideal wine for those looking for something sophisticated from this classic Margaret River blend.
