The Paringa Estate Peninsula Chardonnay is a superb white wine with racy acidity and gentle oak characteristics. This wine is great to drink on it's own if you want to discover the different flavours that Chardonnay can give but it's also superb when served with fish dishes like Dover Sole.
Founded in 1984 by Lindsay McCall when he purchased a derelict orchard, Paringa Estate started small with a three tonne harvest in 1988 but has grown considerably in the intervening years. Production is now at 200 tonnes and Paringa Estate is one of the most highly awarded wineries in Australia, regularly winning gold trophies for its Shiraz, Pinot Noir and Chardonnay. “One of the best, if not the best, wineries on the Peninsula' says James Halliday.
Vineyard
This is sourced from a single vineyard on Callanans Road all planted with the Mudgee clone, which is an original Busby clone, along with fruit from the home block at the cellar door and the neighbouring vineyard, leased by Paringa. The vines, which are aged between 20 to 25 years old, are grown in the typical red volcanic soil, known as Ferrasol.
Winemaking
The hand-picked fruit was whole bunch pressed into French oak barrels, of which 30% were new. Approximately 30% of the yeast used was indigenous. A malolactic fermentation was prevented. Barrel maturation took place on the lees, over a period of 10 months, during which time the barrels were stirred fortnightly.
Tasting Note
The hallmark of Mornington Peninsula Chardonnay is the fresh grape fruit like acidity that is abundant in this Peninsula Chardonnay and highlights the subtle nuances of vanilla and ripe peach. The extended finish has noticeable minerality adding to the complexity.
Serving Suggestion
A perfect match for roasted turbot with a hollandaise sauce or lemon butter Dover sole.
