Carlo Pellegrino Passito di Pantelleria liquoroso 50cl bottle 2018
The jewels in the Carlo Pellegrino crown are the dessert wines from the island of Pantelleria, a volcanic outcrop of black lava rock situated off the arid Tunisian coast which forms Italy's southernmost DOC region. Over 300 small growers supply Pellegrino with premium quality Zibibbo (Moscato) grapes. Quality is guaranteed through strict pruning and the growers keep to below 30 hectolitres per hectare as part of the contract. Pellegrino invester over £2 million in the construction of a winery on Pantelleria. The Passito is made with about 20% sun dried grapes added to the must; the result is an elegant and complex tasting wine; delicious poured over ice cream.
Vinification
Soft pressing of the grapes. Fermentation in temperature controlled stainless steel tanks. When the alcohol reaches 4/5% fermentation is stopped by adding alcohol. 20% of naturally sun-dried grapes are added to the must during fermentation.
Viticulture
The vineyards are located in small terraces surrounded by stone walls and the vines are grown very low in a crater hole to protect them from the strong winds
Tasting Note
This dessert wine, made from at least 20% of naturally dried grapes, is complex and elegant in style with a bouquet reminiscent of dried fruit, apricots and an intense and lingering finish.
Everyday Serving Suggestion
At room temperature or slightly chilled. Pairs beautifully with a variety of desserts, from fruits crumbles to honey and nutbased dishes, but also with hard cheeses.
