This family-owned boutique winery is located in the Alto Maipo region of Chile, boasted as the best region for growing superior Cabernet Sauvignon. The family planted their first vines in 1994 and created their first vintage in 2002. President Andres Perez Cruz has acquired an impressive collection of awards and gold medals starting with their first vintage, and today they are one of Chiles most awarded wineries. Their vineyard is comprised of 250 hectares of vines nestled in the foothills of the Andes Mountains. The vines are placed in the best location above sea level for growing grapes. The Mediterranean climate features rainy winters and dry summers resulting in healthy grapes. Award-winning architect Jose Cruz Ovalle designed and built their eco-friendly winery. He used native wood for the roof and stone foundation to pay homage to the Incas and the structures they left behind. The building design allows for the use of natural lighting. The winery uses its environment to promote temperature regulation and free-flowing air circulation. This makes Perez Cruz one of the most unique boutique estates in the world.
Vinification
At Perez Cruz wines, the grapes are handpicked. After being carefully selected, the grapes are gently crushed before being placed into stainless steel tanks. Perez Cruz uses cold maceration to bring out the best qualities from the grapes. They are then left to ferment in the stainless steel tanks for 24 days. After the fermentation is complete, the wine is transferred into French oak barrels where it is aged for twelve months.
Viticulture
Every step of the winemaking process is carefully thought out at Perez Cruz wines. The grapes are carefully planted in the most sought after areas of the Andes foothills. Each grape is handpicked to ensure only the best go into their wines. The eco-friendly design of their winery features a gravity-flow process with a three million litre capacity. The wines are then left to age in the barrel cellar featuring a capacity of 5,000 barrels. The barrel cellar is designed to take advantage of the below-ground conditions, allowing for the temperature and humidity to be controlled naturally.
Tasting Notes
Perez Cruz Cabernet Sauvignon has ripe red fruits and spices on the nose followed by the aroma of toasted bread and vanilla. The full-bodied wine delivers a fruity flavour for the palate with ripe tannins and a soft finish.
