Vinification
Most of the grapes were hand picked, although a portion was mechanically harvested to ensure the optimal level of ripeness in the fruit. Upon arrival at the cellar, the grapes were carefully destemmed. 100% of the grapes were fermented in stainless steel tanks for a period of 15 - 18 days at temperatures that varied between 25 - 28C (77 - 82F) with 3 to 4 pumpovers daily that moved from 40% to 80% of the total volume, as determined by enological tastings. The wine was stabilized for 15 - 20 days at 4C (39F) and later earth-filtered prior to bottling.
Viticulture
The vines are vertically positioned, spaced at 1.5 x 2.2 m and drip irrigated. Our vineyard canopy management begins in the spring with the elimination of undesired shoots. The crops are green harvested to eliminate short shoots.
Tasting Note
Complex with grilled red pepper, raspberry and blackberry fruit, dried plums mingled with tobacco and mocha. Velvety texture with soft and fleshy tannins in a nicely integrated finish.
Everyday Serving Suggestion
Enjoy with red meats, roasted lamb and roasted red peppers. Best served at 17 - 19 Celsius. (63F).
